Porcelain and granite both handle UV and heat well and do not fade. Quartz can discolour under prolonged direct sun, so it is better used under a covered pergola than in full exposure.
A sink makes the space far more usable, and both supply and waste should be run before paving. Retrofitting them afterwards means lifting finished surfaces.
